If you’ve ever found yourself in a trendy restaurant, wandering around the beverage section in Whole Foods or even just hanging out with your “healthy” friends, you've definitely heard of it. It’s practically a trending topic!
So, before your curiosity burns out, what is kombucha? Let's start with the fundamentals. Kombucha is a fermented drink that has been around since ancient times. It’s full of probiotics, antioxidants, vitamins and more. The ingredients used to make it are very common: tea + water + sugar + S.C.O.B.Y. a.k.a symbiotic colony of bacteria and yeast. Don ́t worry, even though the S.C.O.B.Y. may look like a questionable mushroom, its not! This is how it works. The tea and sugar start a fermentation process with the S.C.O.B.Y and after a mere 10 to 15 days you get a bubbly drink chock full of many health benefits.
